"I
would feel more optimistic about a bright future for man if he spent
less time proving that he can outwit Nature and more time tasting her
sweetness and respecting her seniority." ~Elwyn Brooks White, Essays of E.B. White, 1977

"Earth Day is one of two observances, both held annually during spring in the northern hemisphere, and autumn in the southern hemisphere. These are intended to inspire awareness of and appreciation for the Earth's environment. The United Nations celebrates an Earth Day each year on the March equinox, a tradition which was founded by peace activist John McConnell in 1969." Author Unknown via Yahoo!Answers V2MGGE9SJ6DP
What better time to celebrate the Earth than in the spring? Everything is fresh, new and clean. It's also a great time to indulge in some fresh and clean recipes. It's always fum for me to try to find recipes to celebrate any kind of holiday (although I rarely have the time to prepare them). And at this time of the year, some of the best produce is in season (i.e. strawberries, asparagus, beets). This means you can enjoy cheaper prices and much fresher produce. And if you want to go a step further in keeping yourself and the Earth healthy, buy organic.
Here's 5 recipes that I came across that are suitable for celebrating Earth Day and spring:
